Which type of camera for the house entrance area?

Masking is no longer enough? Learned something new again.

Usually masking is enough, but there have also been some other rulings. However, more specific (Aluhut) groups were involved. Privately, there are usually no problems if the neighborhood is reasonably okay and you don't hang the camera on the sidewalk.

What software do you use to record?

Synology SurveillanceStation on a Synology NAS. Runs absolutely smoothly. I also use it for motion detection (however, it only marks it and does not trigger contacts, for that you might need a "real" NVR).

For simple stories, Synology is not bad. Depending on the quality of the camera, motion detection is done by the NAS or the camera. QNAP has something similar. If it gets more "professional," there are other solutions. However, most of these exceed the budget and effort for private use...

It always depends on what you expect. If you want to feed the camera images of the NVR, for example, into a multiroom video system, you need something with an HDMI output. Motion detection via [NAS] is generally more appealing to me, even if you could provision multiple cameras simultaneously. Basically, I record continuously at least on my end.
