At some point, if needed, one could plan a kind of mini granny flat upstairs (e.g., for a parent who can no longer live alone)
We definitely want to live only on one level. Also with a view to old age later.
If I may point this out: You downstairs (with a view to old age), the parent even older then upstairs
You should reconsider: either the parent moves into "your" ground floor wing and you move upstairs, or ...
Regarding the bathtub: you hear often that you hardly need the bathtub, but what if you can or even have to bathe for medical reasons (sitz baths ;))? So a bathtub should be included in the house, but I guess you have also planned that for the kids?
Parent wing basically above a walk-in closet: I like that.
I would feel uneasy if the bathroom window faces the entrance. It would be nicer if there was garden access as well :)
Long distances: my suggestion would be to place the cloakroom area under the stairs and put a door there to the utility room. Or the other way around. The only door to the utility room through the open living area only brings unrest and dirt and nerves torn apart sooner or later. Maybe one could think about rotating the stairs also to get them out of the dirty area. There is enough planned space, so the forecourt of the stairs should also be planned meaningfully.
Regarding the upstairs: lots of potential for changes. Many things have already been mentioned.
I think, from the basic approach it will be a nice house. But there are some drawbacks that can be fixed if you keep at it.
It is not a small standard house where you have to live with compromises, but there is lots of room for improvements, which however also means you have to let go of one or the other "corner."
For example, one could swap the parent wing with the utility room wing (of course with changes that also affect the exterior walls ;)) Then you would have access from the garage through the utility room, bathroom next to WC, access to the dressing room under the stairs, eastern sun in the bedroom, western sun in the dining or living area ... etc.
