You can place the Fritzbox behind the cabinet under the stairs, then it might be able to provide WLAN for the whole house.

I would avoid PoE injectors in terms of operating costs. With a PoE switch, you are more economical in power consumption and maintenance over a few years.

In general, I can only advise to keep an eye on power consumption with all the tinkering.

A question to all the people who already have Ethernet wiring in the house: How many devices do you really use in the house? Wouldn't it be enough to just patch the 4 ports of the Fritzbox until potential demand arises?

The Fritzbox could theoretically also hang outside. I would have to think about it. If I could get better DECT reception that way and save an access point.

SIP/SIP data doesn't ring a bell for me right now. (I don't know if I will get this data from the provider. I'll probably end up with Telekom first.) I thought I'd just buy two GIGASET IP phones, plug them in, and use them simply.

I would like a SIEDLE with an in-wall mailbox, a simple bell, and door opener function. I thought I'd connect it to my Fritzbox and then be able to answer the doorbell from any phone.

4 ports are not enough for me. For a long time, I also had an 8-port switch. A new 16-port would have been enough, but the 24-port had a very attractive price.

Devices:
Network printer
NAS
CCU 2
2 x Raspi
TV
PC
Access point

I still haven't put the devices into a network cabinet, but at some point, I'll manage that too.

Can you say a little about your setup?

The gray ones are 2 patch panels?
The black strip your switch?
What is the small black box on the right?
Is the white box a NAS?
Do you have a separate router or additional APs?
How is this setup in terms of noise?
Have you connected your door intercom to the system?

The gray ones are patch panels. In your place, take a 24-port one for rack mounting right away. The small black one is a POE injector from Unifi. The white box is a NAS (2-bay Synology?). In terms of setup, I only see a Fritzbox as a router and one access point since there is only one injector. What I see should be fanless except for the NAS. If installed in a cabinet, it won't be audible. I am currently tinkering with our network for the new house. It currently looks like this in setup:
