Where do you currently have your "cooler" pantry? In a rental apartment built ages ago? Or in a new building? In your project, the pantry will not be colder than the rest (except in winter if you always leave the window open) because it is within the thermal envelope. Also, the idea that you have more space in there than if you had to store everything in the kitchen is a misconception. You also have circulation space in the pantry, which is unused space. If you leave out the pantry, this area plus the wall and the annoying door can add significant value to the kitchen planning. One could plan a nice tall cabinet row on the other upper wall, with refrigerator, oven, and dishwasher at working height and plenty of storage for supplies. Then a spacious island with cooktop and sink. I have sketched this once (the exact arrangement would need to be planned).

Since a seating area is not necessary, you would have the entire back side of the island with 60cm deep cabinets and two entire tall cabinets just for supplies. Additionally, a lot can fit in the tall cabinets for dishwasher and oven.

For the door to the kitchen, I would consider a sliding door, the same applies to the terrace door (or have it open outward).

Wow! Thanks for the quick sketch. The solution also sounds interesting. We have a first appointment with the kitchen planner in January, who is supposed to give us suggestions and ideas. That's why I don't want to "hang up" on the exact kitchen planning just yet; maybe the floor plan will still change a bit. Currently, we live in a single-family house built in 1980, and mentally I find it difficult to completely do without the pantry (for example, we constantly have 4-5 beverage crates lying around, etc...). For me, it was more about the basic concept of the house; can one work based on this floor plan (a few walls will always be shifted now and then) or is the floor plan absolutely to be discarded and we have to start planning from scratch.

So I can warm up to the entrance area with access to the garage including office and guest WC/stairs. But somehow I don't like the whole living area. The kitchen seems misplaced and more like a "show-stopper." I imagine coming in and bumping into the island first. I also miss a nice line of sight. The dining room is outsourced but can be appealing because of the nice (view?). Of course, it is a modern but not very cozy design. But OK. Fireplace from the living room and dining room clearly visible also appeals to me. Upstairs, hm, needs to be reconsidered, was mentioned.

2. The freezer goes in the utility room or, if available, in the basement. Everything else is small stuff that can disappear in kitchen cabinets (including drink crates!) Pantries in new buildings are not cooler than the rest of the house or only insignificantly so. No food in the world benefits to a relevant extent from a room temperature that is 2-3 degrees below the temperature of the living areas.

Just call your pantry a utility room, since you don’t have one on the ground floor anyway, then you’ll have peace here.

Don't you find the way from the entrance to the kitchen too far?

The reason why the living area and kitchen are a bit further away from the entrance is that there are no neighbors in that area who can watch me while eating, cooking, watching TV, etc. There is only a dirt road and a meadow, whereas on the entrance side there are neighbors and a street. For that, I'm gladly willing to accept the few extra meters every day.

I didn't want to start a discussion here about the point of a pantry. Everyone has their individual preferences. For me, it was more about the basis of the design, whether one can build on it and continue planning or if something is fundamentally wrong with it.
