It is my personal opinion. Based on the budgets you are planning, one could assume that you want to see yourselves in an upscale living situation. Your income is enough for the house. But I think it is not enough to additionally realize the lifestyle you probably imagine. It would not be enough for me at least, I know how the money for that disappears. However, no one has to adopt my opinion.

Well, upscale living quality is a matter of opinion, but why do you think our budget is not enough for the standard of living? If you divide our premiums and bonuses over the months, we come to about 9500 euros per month. That should be enough for vacations, etc..

If you consider it sufficient, then that's fine! Then just do it that way! Personally, I consider it too little if you are a person who spends 50k € on a kitchen. In a 50k kitchen you don't cook Aldi steaks.

I often wonder here, and I mean it seriously, how small the ego must be... With such an income, to question a project like this and have it judged by "normies." Although I have to agree with my predecessors to some extent. I didn't pay attention to the region, but: area RLP ("cheap area"), architect's estimate 550k for a single-family house with a basement and plot on a slight slope with 1 garage. Without exterior work and partly upgraded fittings. But we do a lot ourselves, so I strike the 550k. Unfortunately, based on all the invoices (building materials and partly quotes), I see that this 550k is not far-fetched. I forgot, it's 150 sqm + 75 sqm basement also used as living space. You will surely have everything done and partly have to overpay for some things... Maybe have the offer checked by a professional. Something has to be saved somewhere, and surely not on the profit.

Oh, that's why no, we mainly cook vegetarian in our currently affordable kitchen [der Hauptkostenpunkt ist für uns eher die Urlaube die wir aber reduzieren müssen das ist uns klar].

Unfortunately, I do not understand the first sentences, I just wanted tips like experiences etc. My father-in-law was with the construction company, he was a civil engineer until a year ago and has also built houses himself. Therefore, we are on the safe side that the offer will not turn out much more expensive, except that the issue of additional construction costs with excavation can indeed be somewhat higher. See above, it seems that there are quite different opinions as to whether we want too much or not. Indeed, it is so that we do not want to restrict ourselves particularly much for the house and it should be paid off in a maximum of 20 years.
