Building a single-family house with a basement - Is the financing calculation too risky?

Great, then the only risks left are that the kids consume more than is good for them and the risk of unemployment.
If this setback can be bridged over a period of time, then everything is fine.
If I were you, I would still be a bit careful. Few do special repayments because the money gets misused for other things.
The wishes you have are pretty extreme, where the brand matters more than the thing itself. That then also rubs off on the children, who then consume 3 iPhones a year by the age of 12.
But you'll see that then

You should not let yourself be intimidated by the average Joe. You earn and spend amounts that are unfamiliar to the majority of Germans and also to most users here in the forum. That causes fear. But it has nothing to do with you. It is just a projection.

The project is calculated in a healthy way. Do it.

2008 and 2009 as well? I know some salespeople from various industries who have gotten massively into trouble.

4 m of height difference is not a steep slope; there are other plots. We have 13 m.

I would integrate the basement as a living floor. A granny flat for the children maybe later sounds a) like a makeshift solution b) lack of imagination of the planner. The basement is either a granny flat or a storage room.

Regarding the costs: 30,000 ancillary construction costs are too little, especially on a slope. They might be sufficient for flat land. 110,000 for the basement, what is included? For earthworks, waterproof concrete shell, and finishing to living quality, it is too little. 100,000 for the outdoor area considering the plot size, slope, and presumably elevated requirements, without own work is very tight. I would already look for a garden landscaper now and talk to him.

With that, the debt would be too high given the income. However, the loss of a job or chronic illness does not take away our breath for life. Reconsider the granny flat.

Yes, with us during the crisis years we even made a profit, as consumers rather saved on bigger purchases like vacations etc. and instead treated themselves to our products... the construction company said that the basement normally cost 70,000 euros and because of the 3 rooms as living space it was more. The other basement rooms are also normal basement...

If one of us were to lose the job and we could not find a new job for a longer time, then we would be supported by our parents, they have apartment buildings and thus income....

Of course, children cost money, more the older they get... they are more spoiled by the grandparents but that is not a problem yet, I am rather a strict mother and intervene if it gets too much. We also save for the children's education and driver’s license etc. so that something is available then. In an emergency, our parents would financially support us should the worst case occur...
