Take a look at floor plans for 10x12 and optimize the ones you already like. Based on that, it is definitely easier. And start on the upper floor as always preaches – usually you have certain visual preferences – try to figure out exactly what you definitely want and what you cannot do without (possibly by looking at existing floor plans on the internet).
If, for example, it is the straight staircase, then enter "floor plan 10x12m straight staircase" on Pinterest and you'll find a lot.

But be aware: some deaths you will have to die.

If you like the morning sun, why not have the bedroom in the east? I have mine in the east too, and I can tell you, it is wonderful! But I hardly ever see the southern sun there, since by then I'm already up.

It's hard for me to give tips and suggestions. You have optimized the ground floor [EG] for yourselves. If you start to mess with the stairs or the walls now, you will surely get an immediate "that doesn't work" because then the supposedly perfect [EG] would of course suffer. Increasing the exterior dimensions is also not possible (rather the opposite). So you run into a wall unless you say where you are willing to compromise on the [EG].

So more east is actually not possible for the bedroom. I could only swap it with the bathroom upstairs, but I should keep it as close as possible to the utility room to save costs.
Yes, that's true, you tend to make the house bigger and bigger. But I think it's big enough. Only the alignment and orientation still need a bit of fine-tuning.

...then as a sincere tip: The biggest help for your floor plan would be to draw it in 2D. And to draw in the furniture to scale.

It would help you (even if you apparently don't quite want to believe it) and the discussion here. You have hardly any participation from the "usual suspect users" here (except , he just can't help himself). But those are exactly the ones with the most experience (I don't mean me). They all have no interest in an unfurnished Sims perspective.

Regarding the eternal "children's rooms belong in the south" discussion, which I can hardly listen to anymore: There are certainly adolescents (myself included back then) who don't like it when the room becomes stiflingly hot in summer. The summers aren't supposed to get any cooler either. When I was old enough to do my homework alone in the room, school ended so late that in winter I only had about an hour of decent daylight. So I had to turn the light on again. During the transitional period, it was somewhat optimal, but such a thing hardly exists anymore nowadays...
