80 cm rough dimension for a shower is very narrow. For a toilet as well.
I do not see a kitchen island in the plan for the kitchen.

For what?
It's absurd. You can kill all the windows on the left side of the plan like that. No light comes in there anyway, or do you think the one-meter wind tunnel will make up for it? It won't! What kind of view is that supposed to be anyway? Terrible.

The floor plan on the ground floor isn’t mine either. A miserable long dark hallway leads the guest directly to the dishwashing area. I don’t see a kitchen island there either. OK, you can turn into the dark living room then. But I’d rather escape straight into the garden.

I find the upper floor quite okay except for the disadvantage that Child 2 sleeps with their ear against the bedroom. That is a pity but bearable given the lack of space. Maybe make the wall a bit more solid.
I would definitely put a window in the dressing room. The bathtub under the sloping roof lies completely below the 2m line. Do you want to crawl in there? Maybe better to leave it out?

What about the area in front of the house? Can it be used as a parking space and only build a small shed?

So I would swap the kitchen and living room and then install a door to the kitchen to have a short path for the groceries. I don’t find a shower under the slope bad at all. We’ve had that before and will have it again from mid-May in the new house. Otherwise, I really like the floor plan. Instead of the garage, I would also tend towards a carport so that more light comes in from the side. If you put the garage in front, you can still accommodate a large shed at the back.

The knee wall height is 1.05 and there is about 70cm of space on both sides of the bed.

What 25cm can do. I find your bathroom very nicely designed.

What I like about the design is that you have consistently focused on your cooking and dining area and accepted a "TV-relax-cave" for that purpose. I would build a large door from the family room to the hallway - this will give you peace on the upper floors. Moving the master bedroom to the attic has the advantage of having a better retreat space (quiet) and the disadvantage of getting less involved (small children). In any case, I would make the partition wall to the dressing room reversible and already have connections installed for the option of adding a bathroom later in the attic. The location of the garage is mediocre - but it is simply due to the property. An external cellar access could prove practical as long as it does not block the way to the garden.
