Roller shutters with a switch and central timer, is that possible?

Can also be done very easily and inexpensively with a Shelly2 behind each switch. With that, you can control all the shutters at once, according to arbitrarily complex schedules or sensor data (brightness), and also continue to use the switches easily. You don’t need any extra wiring, and the software of these things is open source.

I would prefer to control this via a central control unit (PLC) and then use push buttons instead of switches - that is, "press impulses" instead of "switch states."

Then, the latest command always applies, and the sources of the commands cannot electrically interfere with each other.

I would use "switching" - near the patio door - for something else: namely a lock / safeguard to prevent the central control from automatically locking me out because time X has come, but I am still sitting outside.

I don't know that at all. Can I simply program the times with my smartphone and everything runs simultaneously and then each with a local switch manually?

Yes, something like that... it's also just a bus system for retrofitting.

I have installed a system like this. In the bedroom I have the central unit. It controls all the roller shutters that are on the timer. The central unit has an astro function. That means you tell the central unit that the roller shutters go down 30 minutes after sunset. And go up 45 minutes before sunset. Next to it I have a switch that manually controls the upper roller shutters and next to that one that manually controls the lower roller shutters. I have a switch to raise and lower each one at the window.
The wiring: plus and minus as well as earth at each window. To the roller shutters I have 4-core cables and a 6-core control cable that I have looped from the central unit to all the roller shutters.
I avoid radio as much as possible in order to exclude manipulation as much as possible.
The wiring sounds worse than it is.

Hello!

There are now Alexa switches for electric roller shutters, which I would prefer due to their low installation effort. In addition, operation from anywhere with the mobile phone is possible.
