Above all, according to the introductory text, there are only 87 cm knee wall rough construction dimensions. That is really quite low. It is not clear whether this is due to the development plan or simply the standard floor plan.

Regarding the sun, you can check out Sonnenverlauf de. There you can display the sun’s path for the entire year for your property. It helped us a lot with planning the terrace.

I would never build under 1.25 KS either. That is the dimension where you can still sit at the head of the bed when the headboard is under the slope. Anything less restricts too much, even in the children's room or bathroom. I would rather do without the bay window. It is so unnecessary. Instead, you can put a dormer on the upper floor. The costs may be about the same: bay window vs higher KS. There should be a storage room under the stairs. Keep in mind that no proper clothes/wardrobe cabinet can fit in the hallway by the stairs. The niche is not deep enough for that. I find the children's rooms excessively large. Instead, there should be another storage room upstairs. Where are sports equipment, towels, seasonal clothing, suitcases, and such going to go?

It is basically the standard floor plan. Only the wall by the stairs was built to have a small wardrobe there, the shower in the guest toilet, and the dressing room.

Could it become a problem with a higher knee wall regarding the requirement to be 3m away from the boundary? That shifts everything, doesn't it?

What does the knee wall have to do with the exterior dimensions?

I think we asked for a higher knee wall. But it is not possible for legal building reasons. Either because otherwise we would become two-story, or because the ridge height changes and we have to keep half the height as a distance. But I don't remember exactly anymore.
