What constitutes a full storey is regulated by the state ordinance. Here in Lower Saxony, I would count an additional storey at a knee wall height of 160 cm, even if only half... at least I think so based on my knowledge ...I don't know where the OP is from, but the regulations are quite similar...

Correct, the definition of the number of storeys is regulated by the respective building codes. However, with a 1.60m knee wall, I would also suspect a second storey. But half a full storey is not a full storey and is therefore probably permitted as well.

That’s how I see it too.

The attic floor is considered a half-storey (here in Baden-Württemberg according to the building authority up to a knee wall height of 1.65 m) and should then also meet the approval requirements.

This results in a classic 1.5-storey single-family house.

First of all, thanks to Doc.Schnaggls. That is exactly the right description if you have no idea about all that stuff.

Since I am located near Ulm, most likely the State Building Code of Baden-Württemberg applies. It states:

"Full stories are stories that protrude more than 1.4 m above the average measured ground surface and are at least 2.3 m high, measured from the top edge of the floor to the top edge of the floor of the story above or to the top edge of the roof covering of the roof above. The average measured ground surface is derived from the arithmetic mean of the elevation of the ground surface at the corners of the building. Not considered full stories are 1. stories that are exclusively used for housing building services and heating systems, 2. top stories where the height of 2.3 m is present over less than three quarters of the floor area of the story below. Cavities between the top ceiling and the roof, whose clear height is less than required for living spaces according to § 34 Abs. 1, as well as open galleries up to a floor area of 20 m² are disregarded."

Does that mean that everything above a knee wall of 1.40 m would be another full story? Not below, right? Then it would be a single-story building with a ground floor and upper floor with a knee wall of 1.40 m?

No.
If the area of the top floor (that is, your attic) with a height of at least 2.30m is smaller than the area of the floor below (in your case the ground floor), it is not a full floor.

That means you draw a section and establish the 2.30m line. Then you measure the distance from the exterior wall to the intersection of the roof covering at 2.30m and then draw the 2.30m line into the floor plan. Now you can measure the area......
