That is also our plan. What parapet height is required there without having to install a fall protection? I’m confused again, there are different pieces of information in the search engines ...

According to our architect, it depends on the federal state and here in Lower Saxony it is 80cm:

"According to § 4 para. 3 sentence 1 DVO-Lower Saxony Building Code, window sills must be at least 0.80 m high for a fall height of 1.00 m to 12.00 m, and at least 0.90 m high for a fall height of more than 12.00 m."

However, this is apparently calculated almost from the top edge of the window frame, so the actual sill can be a bit lower (if one wants - we are not sure about that with 2 small children).

My heart bleeds; in the Borstei in Munich something like that is lovingly maintained. That is actually a pretty clever idea and can definitely be carried over into the modern standard. The thing was built exactly like that, as 11ant already said, as a non-electric refrigerator and it works very well! Today, you insulate it towards the living area and have a brilliant storage for foods that should be cool but not stored too cold (potatoes, carrots, fruit...). But now it’s history... unfortunately.

A nice project! Moving the bathrooms is understandable, but is there also a sewage pipe nearby? I do have some doubts about the statics in the kitchen. Removing the thick wall—I’m curious to hear what the structural engineer has to say about that. I also see the issue with the wardrobe and wouldn’t underestimate it, especially since Child 2 is on the way now. Measure whether you still have enough depth in the mini-hallway forming behind the chimney (or whatever that is). If it’s over 45cm, I would plan like this: The shown cabinet is 130cm x 50cm—not huge, but every centimeter counts here. The shoe cabinet is 80x35. In the design, some walls have been taken away quite generously. The passage could also be shifted. But in reality, it probably looks different. Some more precise sketches would be appropriate now, since you’re already hard at work. :)

Very nice project! From the pictures, it reminds me of our renovation. You are very lucky that the house has not been completely renovated. The original doors are worth their weight in gold (unfortunately, we no longer had them). The structure actually looks good. Nice staircase. We also stripped ours, sanded it, and varnished it again. And the walls, yes, they look awful in the meantime, but that doesn't last. The floorboards will definitely be beautiful once they are finished. We still have ours too, but unfortunately they are rather simple, laid in pieces, and also painted with oxblood; even if restored, they wouldn't look nice. So you can count yourselves lucky!
