Mineral plaster instead of textured wallpaper?

Regarding the paste: yes, as long as it only contains methylcellulose, it is a "neutral" product. But if extra/special paste is used, there are synthetic resins involved, which I prefer to avoid on my wall.
From your answers, I gather that it is common to wallpaper the walls even in new buildings?

thanks for your tip, I imagine it looks nice. Have you had experience with plastering work before? And how long did it take you approximately, as a pair, for e.g. a 15 sqm room?
I am apprehensive because I lack any experience and cannot assess this work :)

Not really common. It is a mix of "plaster + painting," "plaster + painter’s fleece + painting," "plaster + fine plaster (and painting)," up to the simplest variant "woodchip wallpaper and painting." Although personally, I wouldn’t want woodchip wallpaper in my apartment. In my opinion, it has the charm of decades long past.

Exactly, that reminds me: one reason why the general contractor uses woodchip wallpaper is that the variant "Plaster + Painter's Fleece + Painting" would otherwise be significantly more expensive. Otherwise, is the variant "Plaster + Painting" without painter's fleece less stable, meaning does it hold up less well than "Plaster + Painting"?

Oh, in typical house construction, the synthetic resins in the paste are the least of the problems. Besides, nice paint is applied on top of the woodchip wallpaper/fleece...

Sort of.
Over time, the new house tends to develop settling cracks in the plaster. This actually always happens – more or less. With painter's fleece, you don't see them, and the plaster doesn't have to be smoothed as finely. Q3/Q4 plaster is quite similar in price to the option with painter's fleece.

(except for the insulation -with us jute/cellulose- and the glue on the windows)
