Difference in purchase cost between gas pump or heat pump

So here in Bavaria/Allgäu it has already been -20 °C several times....

I've also heard about the "smart control" several times and basically find it totally great. But how can that be implemented in reality?
So that after sunrise the heat pump starts working, but only uses the electricity from the photovoltaic system and stops working again when that is gone. At the same time, it has to be taken into account that it then does start up before the hot water runs out or the house cools down too much.

I would be interested to know.

It won't work quite like that. There are plenty of days when there isn't even enough photovoltaic electricity to cover the base load.
I have installed a Geisha (F-model) and have also experimented with timers, lowering it at night and slightly increasing it during the day. Often, it didn't heat at night at all, and the house cooled down a bit.
None of this really convinced me. The only thing I do is have hot water prepared only between 11 a.m. and 5 p.m. That is normally enough for us. But it depends on shower habits. And our house/photovoltaic system faces southeast, so there's more sun in the morning than in the afternoon.
There are certainly other photovoltaic-heat pump combinations that communicate better with each other and thus ensure a higher self-consumption rate.
Still, I am very satisfied with the Geisha, especially for the price of 2500€. But you have to do a lot yourself or get involved. Or you have a capable and willing heating installer who supports you in such an installation.

Yes, that is more wishful thinking. You can optimize the heating periods somewhat and align them with the photovoltaic system, but in the end, it is the lack or only low solar irradiation that spoils your plans.

You mean "Smart controlled, you ideally only heat the water at noon anyway when the sun is shining on your photovoltaic system, with which you then heat as needed at night," because especially at noon, besides the solar energy, the house should not be additionally heated. I always imagine smart as being able to control everything via the internet on the smartphone or something similar. Or to raise/lower the blinds via smartphone. I usually don't need that and have no intention of installing it. But to use my own photovoltaic electricity with the heat pump, my house doesn't have to be smart, right? That should be standard, even without smart?

Oh dear, the marketing and advertising people have done all the work and now no one can see what the term "Smart" actually means.

At its core, the statement is relatively simple: an intelligent building control. Possibly as an island for the heat pump+photovoltaics and everything that belongs to it.

Smartphones and smart buildings and controlling it all from the outside are basically different things and only remotely related.

But yes, a smartphone also has smart resource management built in. It switches off the Wi-Fi when not in use or even goes into power-saving mode when the battery is low.
