I sometimes write emails at 11 p.m. too. For me, that's one of the biggest advantages of flexible working. I then go to the swimming lessons with my son in the afternoon or, now in winter, I sometimes go for a run at noon between two appointments while it's still light. Of course, there are also workaholics - and the higher up you look in the hierarchy, the more common and expected that is - but I think it's risky to conclude anything just from the email writing time.
I'm not on the salary level of the OP, but also clearly six-figure, non-tariff without leadership or budget responsibility. Working hours of 37.5h/week are observed. Such a salary is not so unusual in our corporation either.
