Sure, I did that at my mother's place. 15 years ago. Nothing smells...

Used kitchens are everywhere on classifieds anyway. I wouldn't buy new for 1 year.

I keep looking there from time to time, the ones I find are either completely worn out for €600, or if they look okay they want €2000 and then say that the fridge and the dishwasher are not included.
But yes – I’m currently looking more often. If I’m lucky, something decent will come up. Or I’ll have to increase the search radius a bit after all.

You will surely find something there. Prices are always negotiable, even if it doesn’t say so. If you like something, watch it. And if it’s listed for a long time, ask for a good price.

Although for 1 year I wouldn’t put much value on something especially fancy. But for 1 year I wouldn’t do anything in that bathroom either, except maybe new sink and toilet.

Note the delivery times for kitchens at Ikea. Don't let it arrive only after months and you are already packing again.

I would definitely dispose of the carpets. The cheapest option would probably be a PVC floor or a cheap carpet as already mentioned here. If it smells there, then definitely get rid of it. You don’t even know what else might be living in there. Flea pupae and eggs can survive many years without a host...
