The temperature difference that is measured is the delta between supply and return. This delta can be measured before the heat exchanger, i.e., on the network side, but also after the heat exchanger, i.e., on the customer side. The latter would also be correct in my opinion if the [WT] belongs to the network operator. If measured after the [WT], the losses of the [WT] do not appear in your energy balance and thus in the heat consumption.

Can you distinguish what goes into heating and what into hot water?
I find 7 kWh per day for hot water very realistic. We have that too.

PS: please use units correctly: Kw/h -> kWh

Only to a limited extent, as already described:
With presence (2 people) it is about 8 kWh, with absence (e.g. one week vacation) about 6 kWh.
So about 2 kWh for hot water.
My mother has roughly the same consumption, a friend as well.
Both have gas heating systems.

So even if we don't use any of the energy, in whatever form, the meter runs.
In the utility room there is accordingly always heat from the transfer station.

Same question, is the meter located before (network side) or after (customer side) the transfer station?

Well, just because you don’t draw any hot water doesn’t mean the energy isn’t used to keep the water warm.
For example, through circulation or other losses.

2 kWh per day for hot water sounds incredibly low.

If the supplier’s TABs state that measurements are taken on the network side at the heat exchanger, meaning the losses during non-consumption are charged to the customer, then that is initially lawful. You agreed to the TABs upon concluding the contract. Conversely, suppliers can also arrange it so that the meter is installed on the customer side and the losses are not directly charged to the consumer. However, this is a simplistic calculation because the supplier distributes the unmeasured quantities among the connected users or includes them in the price calculation.

The hot water storage tank also has losses even if you do not empty it. The radiation losses for a single-family house tank (120 liters) are about 50-80 W depending on the year of construction and hot water temperature. That is already 1.2 - 2 kWh per day. Then you also have losses through hot water in the pipes, even if it only stands still, because they are connected to the tank. So it is not just the tank. With 2 kWh you only get 35 liters of water heated from 10 to 50 °C, really low for 2 persons per day. Add 2 kWh of storage losses and 2 kWh at fittings and pipes and probably 2 kWh directly at the heat exchanger, which are measured as well.
