On the topic of indoor climate: we first lived in an old building with styrofoam insulation, now we live in a building from 1995 with wool. In the first apartment, the indoor climate was a disaster - in the current one it is not much better. However, in my opinion, this is more due to the fact that with window ventilation (especially at night) proper airing is no longer possible when the house is as airtight as a sardine can... of course clay plaster and wooden windows can probably "breathe" moisture better but I still believe the main problem is the stagnant air polluted by people. So either self-ventilating windows again, because they were poorly installed, or some kind of ventilation (for all I care also a hole in the wall).
