On the topic of indoor climate: we first lived in an old building with styrofoam insulation, now we live in a building from 1995 with wool. In the first apartment, the indoor climate was a disaster - in the current one it is not much better. However, in my opinion, this is more due to the fact that with window ventilation (especially at night) proper airing is no longer possible when the house is as airtight as a sardine can... of course clay plaster and wooden windows can probably "breathe" moisture better but I still believe the main problem is the stagnant air polluted by people. So either self-ventilating windows again, because they were poorly installed, or some kind of ventilation (for all I care also a hole in the wall).

The insulation has no impact on the indoor climate, except on the temperatures ;). Whether with glass wool, EPS, or monolithic stone makes no difference. The airtight layer is the interior plaster. Moisture transport through the walls is negligible. Yes, EPS has a lower water vapor diffusion than e.g. glass wool. The amount of moisture that can be transported outward through the walls is in the per mille range of what is generated inside the house. So it's negligible. Anyone who wants fresh air inside the house must ventilate. Only that helps!

I believe the OP just wanted to start some discussion here, otherwise he would have spoken up in his own thread ;)

Not unlikely. KF posts under various aliases in different forums again and again...
