I would install a normal door from the hallway to the pantry, then move the sliding door to the kitchen downwards so far that there is still space on the upper wall of the pantry for a 30cm deep shelf on both the left and right sides of the door.
Definitely plan the kitchen differently - but that has already been mentioned several times. 60cm depth for a cooktop is nothing.
Upstairs, I would actually also reduce the size of the children's rooms in favor of a slightly wider hallway. They are still large enough even with 2 sqm less.
