It’s a question of what is important to you. I cook elaborately, sometimes with 5 things going at once, and I’m glad that I have the sink facing the room. I would prefer to have everything in one row even more, but the room didn’t allow for that.

Everything you list as actions during (Bolognese) cooking only takes me a few seconds each, and then I devote myself to something else. Then the next action and so on. I really stand at the cooktop only for a limited time. But I also have my workspace "in front," next to the sink, facing the room.
Dishes and cooking utensils are organized accordingly. What I often need for stirring, ladling, or seasoning in the pot is within reach of the cooktop. The other work utensils are within reach of the workspace. That’s why I really spend only a short time at the stove.

But I also gladly admit that because of that, I have sometimes burned roasted nuts. I wasn’t “there” again in time. For me, it’s only a half turn around my own axis, between workspace and cooking area.

That always makes me smile .. my dishwasher does the unpleasant dishwashing.

Effective time directly at the sink is of course not endless even with my described preparation; the main time is then the nice work surface. But when doing all these preparation tasks, I keep needing water again and again.

You really only need the space at the stove at the beginning of cooking. The Bolo then simmers all by itself.

Well, and then I have the stove-top battle of the last 5 minutes directly at the edge (island) by the dining table, while the sink is already cleared away again after preparation. That’s why in my case the stove is at the wall and the sink on the peninsula.

But, as I said, everyone has to decide how they want it, though sometimes food for thought is useful.

Hehe, yes, most things go into the dishwasher for me too, but there’s still enough left to wash by hand. My main criterion for a cooktop on the island is mainly the children, and they are expected (for the next 10 years, supposedly—you never know) to cook, bake, etc. together with me. But suggestions are always good, and in some things you recognize yourself, while others simply don’t fit. I’m heading to the kitchen studio now, let’s see what comes out in the end. For now, I’m still in favor of a second sink.

Well, I don't think your island is big enough to fit a second sink. Especially if you want to cook with several people, you should think about where things would actually happen in your workflow.
I find cooking with my godchildren great when we stand together around my peninsula, all preparing something. And the cooktop is a bit off to the side on the other row. Everyone can then easily reach "their" pot to quickly work on it again.
My free part of the peninsula is about 110 (wide) x 90 (deep), and we like to stand three people around this piece. My kitchen is also not as big as yours. On the cooking row, the plates with the prepared items, the spoon rest, etc., are set up in terms of mis en place.

You can see, everyone does it differently. I don't see any benefit in having guests watch me pick the garbage out of the sink that accumulates there over the course of the evening. If something is on display, then the cooktop. That also makes much more of an impression when guests watch cooking than when washing dirty glasses. In a show kitchen, you see the chef at the stove, not the dishwasher ;)

Most of the time you would probably cook with the family, not for guests. When I have guests, the food is finished as much as possible beforehand.
