Why not 2 full stories + shallow gable roof 25-30 degrees (trempel!)? That's how we have it..lots of space, stylish and practical. Visually, I also like flat roofs but the usefulness was the priority..
Nevertheless, I have to say that practical usefulness also counts. No slopes, many window surfaces, continuous roof terrace possible. Even if the development plan specifies a low ridge height, this can be a solution.
Why not a hipped roof with 25% pitch? You see that on every corner here and it is not higher than a gable roof. Although a classic gable roof is gradually becoming so rare that it stands out.
2 full floors with a 25 degree gable roof... Not really my thing.
If then please consistently use "normal gable roof", hipped roof gladly with 25 degrees and flat roof only if you make something out of it, like offset cubes (just a rectangle with a flat roof is pretty boring).

Better a hip roof because of the look. Tall and shallow, they look like 1925 train stations.
That, in turn, does not go together: with a 150 knee wall, a hip roof doesn’t work, you need gables. Only navel-height light strips work in the knee wall, with a dormer (if it is not a gable dormer) otherwise the parapet visually ends up out of place.
