There are beautiful single-family houses, whether a one-story with a converted gable roof or a bungalow with about 120/130 sqm, which are suitable for two people, but also for three (or four) residents. An open kitchen without a large island requires less space than a closed one, where you still plan for two dining areas. Children's rooms of 12 to 14 sqm should be sufficient. And until children are expected at all, these rooms can be used as an added value. However, you could also build a small one-story house with a flat gable roof and prepare the roof as living space and, when the time comes, convert a large office room into two adequate rooms. I would probably favor that in your place. The ground floor thus additionally accommodates, besides the living space, kitchen, and technical room, a bedroom and bathroom as well as a fixed staircase upstairs. Upstairs then simply converted into an office/gym/guest room, and if needed, a children's room partitioned off. If you do not have great demands on the equipment, that is feasible. However, a downside: say goodbye to 30 sqm of storage space – an 8 sqm utility room including technical equipment can suffice for 2 people, plus storage cabinets in the slope under the roof, and when the time comes, a storage room behind the carport and/or a garden shed is completely sufficient.
