Is a 3,000 sqm plot sensible?

The important thing is that you’re into it. Then even 3000sqm is nice. You wouldn’t have to go full throttle with everything mentioned. If you only have 2000sqm of meadow that’s mowed once or twice a month and the rest cultivated as you wish, you quickly see how far you want to take it. But if one of two people has doubts, it won’t work out. For anyone who sees gardening as work, it’s nothing from the start. I quite like mowing the lawn, I find that quite relaxing. Also weeding the beds and everything that falls around the beds is nothing bad for me. No time is basically no argument. It’s just that you would rather spend your time doing other things. So: either you’re into it or not. Ps: even if this year it could have been frustrating at times to spend the few dry and warm hours with garden "work" and there was no real time (dry warm weather) to actually enjoy it.

Hello,
in my opinion, it always depends on the property and good zoning.
If you can zone the property properly and maybe the back 2000 m² can be "used differently" due to the surroundings, then it’s no problem.
Example: During the construction phase, we simply let the farmer who leased the meadow behind our property take over the back part of our land. He mowed the area twice a year and got the hay for it. I didn’t have any work with it.
It felt like our property only extended to our earth mounds during that time; he mowed behind that.
It’s similar if there is a forest behind the property and maybe a few trees are already standing on the back part. Then I would also zone that clearly (e.g. with a fence or a wall) and let the rest behind it become forest.

If the property is, of course, in the middle of the city, I would divide it and sell part of it.

We have almost 1400 m² and I am absolutely happy with it. We have some space to the neighbors and can walk all around our house.
But we also zoned this property somewhat. Behind our terrace there is still some lawn and then a wall. Behind that begins our meadow (not lawn), which can also grow a bit taller and where a few trees will also stand later. You can also take a look at this here:

Not every plot is suitable for dividing. Furthermore, some people prefer a bit of distance and not to have the next neighbor right on top of them.

I think it simply depends on how you design the garden. Although we have almost half the size of the plot, it is limited to 25 minutes of mowing the lawn per week. Once a year hedge trimming, occasionally some weeding, and 5-10 minutes of watering during dry periods. So nothing too bad. With your area and a lot of lawn, buy a good riding mower, then you can manage the area in half an hour. And I find it nice to have some distance from the neighbors.

That's why I wrote (with a small typo), depending on how it is divided.
And with 1000 sqm, you don't have the neighbor sitting right on your lap.

And with a plot of that size, you really shouldn't ignore the maintenance costs.
Besides the potential insurance issue, there are costs for irrigation, fertilization, plants in general, a fence (which also needs maintenance), etc.
What you save on the price per square meter can be eaten up faster than you think. Even if you use rainwater, it only takes a scorching summer. Or the opposite, a summer like this one which can potentially result in zero yield and cause your plants to rot.
