You actually can hardly call that self-performed work anymore, because 95% of construction companies (including the well-known or especially the well-known ones) don’t include, among other things, the floor coverings in their turnkey offers. It’s the same with the remaining painting work. Nowadays, you already have to paint the stairs yourself, and the treatment of the roof underside is also no longer included.
Every company has its own description of construction services where you can’t see at a glance what is included in the "turnkey" offer and what is not.
The 3000€/sqm refers to a plastered standard house with plastic windows.
