Converting a hip roof with a low pitch to a gable roof with the same pitch really costs more in my opinion.

Two gables are added. A purlin roof structure is probably also more expensive than trusses.

Only the latter is true. But the addition of the two gables is a specious argument that abuses the layman status of the builders to justify an outrageous extra cost with naive reasoning. The small walls also cost only peanuts with a slanted upper edge, compared to the more complex hip roof structure.

It’s different if you want a residential roof. Then always gable roof instead of hip roof.

Without a knee wall suitable for installing windows, yes, then you are happy about the gable walls.
