I have 1.20. only in the shower 2.40.
In the guest bathroom 1.30 because the pre-wall construction is that high and then it would have looked strange to be higher only there.
Room-high completely is nowadays actually only done in commercial / office toilets or in wet rooms/sauna areas.
1.20 would be my preference in our two bathrooms, but unfortunately we have, just like you in one of your bathrooms, the difficulty that the pre-wall construction is 1.30m high. Our tiler has now also suggested tiling halfway up to 1.30m. After thinking about it for several hours and looking for alternatives, and also using my imagination, we will probably tile up to 1.30m high. Unless someone here has a good idea.
It would be possible to tile only the pre-wall construction where the toilet is located 1.30m high, otherwise 1.20m or 1.10m high, but then because of the colored tiles the pre-wall construction with toilet would probably appear somewhat dominant and I tend to hide necessities rather than put them in the spotlight.
My recommendation : Tile as few walls as possible, the rest as low as possible depending on the height of the washbasin, except in the shower, where it should be tiled up to the ceiling.

It's a matter of taste... Even in single-family houses there are room-high tiles.
In very large and, in my opinion, exquisite, expensive bathrooms it can really look good. In small standard bathrooms it reminds me of a butcher’s shop. :-(
Regarding the toilet on the same wall. Some only tile the back wall in the area around the toilet and washbasin. So about 30 to 50 cm. The rest of the wall remains free (except for the skirting board).
