Phew - so many pessimists! You can't expect a new build standard from such a house. And just because something costs money doesn't mean it's a disaster project - who says the OP is pushing any of their limits?
If I were renovating an old half-timbered house, I would also use the old methods for the walls. Clay is suitable and excellent for regulating humidity.
The roof can usually remain crooked; there are much more stable worse variants. Possibly, concrete roof tiles were once placed on it, which can be a bit too heavy for a roof designed for clay tiles. For re-roofing, use solar tiles from Prenzlau --> looks good, no additional load on the roof, no problems with fire protection.
The Eternit shell - take a look behind it. If necessary, bring the original masonry back up to standard. Slate would be better if it is traditional in the region.
