Unfortunately, probably a showcase project for a private and financial disaster. Buy a house, start gutting it, and then ask in a forum how to cover it up. Get experts and have a renovation planned. If you think you can manage it under 150-200k€ and don’t have more, then better sell the place quickly again.

You see this often. The roof structure is overwhelmed by the (modern) loads.

Please make sure to get expert help; the previous owners have already botched it enough :-(

Phew - so many pessimists! You can't expect a new build standard from such a house. And just because something costs money doesn't mean it's a disaster project - who says the OP is pushing any of their limits?

If I were renovating an old half-timbered house, I would also use the old methods for the walls. Clay is suitable and excellent for regulating humidity.

The roof can usually remain crooked; there are much more stable worse variants. Possibly, concrete roof tiles were once placed on it, which can be a bit too heavy for a roof designed for clay tiles. For re-roofing, use solar tiles from Prenzlau --> looks good, no additional load on the roof, no problems with fire protection.

The Eternit shell - take a look behind it. If necessary, bring the original masonry back up to standard. Slate would be better if it is traditional in the region.

Since the OP is asking here in the forum and looking for something low-cost, I’m with Lump_LE. Sounds a bit clueless and probably overwhelmed. If money wasn’t an issue, they would have either demolished and rebuilt or hired a company for the renovation. Let’s wait and see if more facts come in.

Well, for example, I would like an inexpensive driveway solution because I am a bit stingy right at this point. I would find a natural path the nicest, but technically that doesn't really work. That's where my stubbornness starts. Making something uglier with money is simply no fun.

What does not work technically on the desired natural path? Perhaps a proper substructure and making the top look like a natural path? I am also a fan of planning things myself and doing various things on my own. Even if you could hire someone for it. You know that from my project. But with the TE it reads a bit differently. Pure speculation on my part. That's why I prefer to wait for further facts.
