One thing are the technical specifications, which a layperson cannot assess. For that, you can take a professional.
The other thing are the standards that are installed, over which you can have some influence if you tell the builder that you want a different brand, a higher quantity, or better quality standard to be obtained and installed.
For this, you should first get prices for what you want to change. Price per socket (including installation), two-way switches, LAN and TV, satellite system, sanitary x instead of sanitary y, etc. Possibly the builder will tell you that you should negotiate directly with the tradesmen yourself. This way you avoid the usually higher prices from the builder. Payment of the trade and subcontracting is usually not worthwhile.
Regarding your questions:
The builder does not have in his construction service description what you would like to have, but what yields him the most economic profit for a new build. Prices are tightly calculated, not only by him but also by the craftsmen. Ask whether you can also get gypsum fiber boards and what the price difference is.
Stairs: this is a steel staircase with beech steps. The steel is primed and must still be painted by you.
Cost point: €10 for paint, €5 for brush, and 2 x 3 hours of work.
Yes, Busch-Jäger or equivalent. Standard white. Equivalent would be, for example, Merten.
Remove? Why not simply choose higher-quality tiles? But be careful: ask for the price of installing tiles other than 30 x 30 cm. But also here, count on arranging that later with the tiler rather than making the house price unnecessarily expensive from the start.
I don't think doing it yourself here pays off.
Artificial stone/granite outside? I only know aluminum with plaster or brick on brick. Artificial stone/granite is used inside... (at least here in the north it is installed that way).
These were examples... Unfortunately, your photos do not load fast enough for me. And the colorful explanations do not explain themselves (to me).
Besides an independent advisor, one should also consider talking to the builder about the individual items of the construction service description and asking questions. It is common practice that changes are discussed and recorded.
Changes usually increase the house price... and therefore also the property transfer tax, keep that in mind.

Gypsum board stud frame???? Gypsum fiber boards are much better suited here, especially for sound insulation, also better due to higher mass.

What is meant by "The final treatment of the steel constructions..."? Or what exactly still needs to be done? Coating?

The number of wall outlets is very low. Also, no manufacturer is specified at all!

Ceramic tiles for €23/m², I also think it would be better to remove this point

This does not mean hollow core doors, right? I am considering removing this point and doing it myself. One can probably save something here..

Exterior windowsills aluminum? I have rarely seen that so far, even in rental apartments it is not common here. I would still need to change granite/artificial stone windowsills.
