It is good and right that you are interested. But that does not change the fact that you have no say on the construction site. The house and the property only become your possession after acceptance. As wrote, you are not the builder but the buyer.

You signed the plans. When the house is finished, you can take a look at it.
If you wanted something different, negotiations should have taken place before signing and the start of construction.

It's basically like when you buy an existing house, only that you have already bought it before the viewing appointment. It's also a completely normal procedure and should not worry you. What is more worrying is that they are not so clear about it. Unfortunately, this has to be noticed again and again: When buying a house, people inform themselves less than when buying a car or smartphone.
