The image does not necessitate base cabinets under which comfortable task lighting could be installed. The cooktop probably has a downdraft extractor planned - at least there is nothing hanging above it that could already have an integrated light. For working in the kitchen, I like to have a well-lit work surface where I don't cast shadows on myself if possible. With several ceiling lights, a pattern of light and shadow is created. A closer proximity of the light source to the work area has advantages over ceiling lighting.
1.: No shadow issues
2.: Illuminating exactly the required area with ideal light for that purpose.
3.: Little stray light that could disturb the atmosphere in the rest of the room.
I would arrange the ceiling light only geometrically nicely for general function and provide task lighting with pendant or wall-mounted fixtures.
In the end, it is always a question of how it should look and what function the light should fulfill. I myself have made functional compromises and am quite satisfied with them.

All right, your assumptions about the downdraft extractor and missing wall cabinets are correct. I have now arranged the lights in a square (3x3) and hope that the illumination will be sufficient. I have no light in the middle, which I don’t think is necessary from my point of view. I hang the spots about 50 cm away from the wall side so that later a 35 cm wall cabinet can possibly still be installed. In my opinion, it makes no sense to plan the lighting for all eventualities and modifications (in my opinion also not possible).

In the living room, I have also planned 3*3 lights, possibly with a wall lamp aligned to the hallway, which I have currently planned with an empty box so that later, if necessary, the outlet for the lamp can be drilled in a suitable place and the cabling pulled out.

what I forgot to mention. We will still install a dual-white LED strip along the living-dining area, which will provide indirect lighting. Would you separate the strips or run one continuous strip from the fireplace to the tall kitchen cabinet?

I don't have a concrete tip on whether it's worth creating sections. Is it a 230V AC system with local drivers or a 12 or 24V system with central drivers? For longer runs with many LEDs connected in series, I would at least avoid the 12V variant.

What would you use instead of spotlights? I have already thought about surface-mounted lights. How would you design the lighting in the living room to be more focused? So far, only the sofa and the table are fixed. There will also be an LED ceiling gap light in dual white.

I think we planned the 12V version. In the kitchen, I was already thinking of downlights mounted on the panel above the appliance wall. Additionally, possibly an LED strip along the baseboard, but I am still unsure about that due to potential dirt being directly visible.
