House roof planned with 7-degree slope and tile covering

We had a single-story extension with a very shallow shed roof built 6 years ago. Our architect really struggled with the planning to make it fit (I quickly checked, the building application even says "DN 5 degrees," which surprises me myself ;-)). The reason was a window in the existing upper floor that should not be covered and a desired minimum height at the front roof edge due to the floor-to-ceiling glazing. There are special "7 degree roof tiles" that are suitable for such roofs. Our roof has been watertight so far, but we built entirely with reputable local craftsman companies, some of which we have commissioned again and again for years and whose bosses you know personally and also occasionally meet in town. In case of complaints, the boss comes by the same day and replaces, for example, a broken tile. Personally, I wouldn't build anything with an "unconvincing construction company." Is a gable roof or a shed roof planned, or does it make a difference regarding the roof pitch? Does the general contractor have references for such a project? That would at least be a way to narrow down the chances of success.

Thank you very much for your comments. After long disputes, it is now a 7-degree pitched roof; the roof has to be removed anyway because the developer built two rows of tiles on the upper floor too low... the elevation was only approved with this 7-degree roof, a construction site that has been at a standstill for a year, wet walls, poorly installed windows... this should actually show that the developer cannot be trusted and confirm our skepticism. Normally, such things only happen on TV, and you don't believe that something like this could happen to you.

Does that mean the attic needs (because otherwise the staircase would only be passable for dachshunds?) half a meter more knee wall, and since nothing can be changed about the ridge height, the roof pitch now has to become super flat?

This means that the entire attic was sold to us as living space with a height of 2.20m at the exterior walls, but only 2 meters were actually built, which means that neither standard wardrobes could be placed nor a showerhead in the master bathroom(!!!) properly mounted high. In the neighboring house, the shower is at the window, the showerhead was prepared at 1.70m... According to the building authority, the ridge height could only be increased minimally, the missing over 20cm were apparently lost in the lower floors due to allegedly statically required thicker floor slabs and a few centimeters more room height by accident...

Omg that sounds terrible … is there a reason why you continue with this construction company? Instead of looking for a new one to continue?
