We had a single-story extension with a very shallow shed roof built 6 years ago. Our architect really struggled with the planning to make it fit (I quickly checked, the building application even says "DN 5 degrees," which surprises me myself ;-)). The reason was a window in the existing upper floor that should not be covered and a desired minimum height at the front roof edge due to the floor-to-ceiling glazing. There are special "7 degree roof tiles" that are suitable for such roofs. Our roof has been watertight so far, but we built entirely with reputable local craftsman companies, some of which we have commissioned again and again for years and whose bosses you know personally and also occasionally meet in town. In case of complaints, the boss comes by the same day and replaces, for example, a broken tile. Personally, I wouldn't build anything with an "unconvincing construction company." Is a gable roof or a shed roof planned, or does it make a difference regarding the roof pitch? Does the general contractor have references for such a project? That would at least be a way to narrow down the chances of success.
