So after the third coat it looks quite neat now. However, we want to apply the Deko Quarz from Haering in the rest of the house. Does anyone know how well it covers? Should I prime it once with white beforehand?

Applying it twice is completely sufficient. Whether white or tinted doesn't matter. The reason for applying it twice is only to achieve an even surface texture. I have used this stuff (medium grain) at my place.

No! Not even with dark backgrounds like green Ripgis board. Priming with paint is absolutely unnecessary.
