The kitchen is too small at 2.60m. We need at least 3m. Otherwise, we won’t have enough countertop space. Therefore, I had to "steal" 40 cm from somewhere.

Well, then that's fine

I also once tried with pencil and graph paper ... it came out almost like with on the ground floor. Upstairs I find your current state quite okay.

Really write down again all the things that need to be accommodated in the house.

I can expand this "list" with cleaning supplies, wrapping paper, Christmas and Easter decorations, craft stuff, small "tool kit," mop bucket, seasonal wardrobe (coats and shoes), guest blankets or spare blankets, folders...

You do have capacity upstairs too. I would put a > 3-meter closet in the office for the wardrobe, spare blankets, folders, papers, craft stuff, and decorations. Then you have that accommodated already. (Cleaning supplies and vacuum cleaner in the storage room). Technicians should not arbitrarily leave their stuff in the utility room, but so that you can put a closet and shelves. You really need some elbow room there
In the bedroom, really plan for more closet space than 2 meters. Surely more stuff will accumulate.

Personally, I would still be annoyed by the wasted living space caused by the large hallway. But understandable, if you disturb each other with noise, you have no choice but to close off the living room. How about if you skip the doors in the kitchen and open the kitchen towards the staircase side (provided you are not bothered by the kitchen smells). That way you can install a counter there and everything would be airier. Of course, kitchen parties are forbidden in the evening.

Advantage: gain of space, more open room atmosphere Disadvantage: kitchen smell in the living room, groceries have to be carried through the whole house into the kitchen, kitchen must always be clean when visitors come

No, the living room is closed anyway

your house isn't that big after all... the kitchen starts for you after 2.5 meters of walking distance

The counter hides quite a bit

Currently, in our rental house we have the following storage:
The wardrobe is open with 130 cm width and 140 cm length. That should remain about the same.
Cleaning supplies are in the kitchen -> utility room + kitchen
In the dining area there is still a serving trolley, which will disappear and the material will move to the kitchen.
In the current kitchen we still have storage space left, so the size of about 8-9 sqm is sufficient.
Besides that, we have no more storage space on the ground floor.
In the basement we have about 10-12 sqm with a cabinet and shelves for storage. That is moving to the attic in the utility room, under the stairs and into the garage. The rest of the stuff in the basement is rubbish.
On the upper floor we have a storage room, which we will also have in the new house. (Suitcases, hygiene articles, vacuum cleaner, ironing board, etc.)
The technical room with heating and washing machine will be relocated to the utility room.
The bathroom is as large as the new one -> fits.
The current rooms with office, bedroom and children's room are overall smaller -> so also more storage and space.

And in the new house we will have about 30 sqm more storage and living space in the attic! So everything should fit
