Vinyl one day, apart from a cutter, no tools or experience are needed. Added to that is the time for baseboards and room transitions.

I don’t know about [Sparrendämmung].

Sanding + primer + paint I would have estimated at 5-7 days. Depends on your quality requirements. For the sanding, fine filling can / should also be done.

Unrealistic. A cutter doesn't work on vinyl with cork, you need a jigsaw. Also, one day is impossible with baseboards.

Nothing is said about cork in the question. Or did I miss something? Skirting boards and transitions are separate, I wrote that as well.

Vinyl is no issue, but filling, sanding, insulating beforehand... that takes time...

I installed the laminate flooring at our place and unfortunately I wasn’t very fast. First, I laid the impact sound insulation, taped the joints, sorted the laminate according to the wood pattern (so that I wouldn’t have two identical boards next to each other later), and then installed it and cut it with a saw. I definitely took about two days per room, but I didn’t work more than 8 hours a day. Painting a room goes quite quickly, the taping up is much more annoying. For all the painting (including wallpapering) we took 3-4 weeks.

The self-builder is often more meticulous than the professional.

But!
You must not forget the work steps, the quantity/area, and drying times.

Painting a new building is not the same as whitewashing a rental apartment before handing it back.
Double coating, possibly priming, including ceilings. Heights in staircases require scaffolding. Acrylic/silicone work including drying times are necessary.
Filling/sanding on top, if desired.
