For the fence, I would do it as you say. For the terrace and carport, I would be more cautious.

Since we will probably move in during the winter half-year and I still want to erect the carport promptly, I have informed myself. I would do it.

Concrete generates heat by itself during curing, but that can basically only escape upwards where you cover it. In addition, you can mix it with warm water and add an additive like that. I find it hard to imagine that the concrete itself would fall below -3 degrees in the process.

I am now at the holes on the street side. There is compacted gravel everywhere. It works quite well with the earth drill. Everything can also be loosened well with a hammer drill. Only removing the loosened material by hand is still cumbersome. The fingertips do not enjoy the work. But I wanted to start soon to concrete the first sleeves.

Maybe these gardening gloves are also something for you (from the series: "When you let the man go shopping"):

The excavation is lifted out with the drill. The flat circular blade is optimal for this, and the round drill hole prevents anything from falling down.

Unfortunately, it’s not quite that simple. The gravel does not allow for a continuously straight drill hole. Besides, I make the hole larger than the 12 cm of the drill.
The glove actually looks useful.
