So.... The only question is how to deal with the open staircase end in the living room. We actually always wanted a door to the hallway so that the cold doesn’t escape immediately.

You should still be able to manage a 1m wide door easily.
As an idea for your two problems "wood stove" and "staircase in the living room". Ask your architect and stove builder if it is possible to build a masonry chimney basically under this staircase overhang in the living room. So completely brick up the corner under the stairs and install a wood stove in it. The flue pipe in the masonry stove would then have to go to the left side (plan left) into the chimney. I imagine cleaning by the chimney sweep might be a bit more complex, but it could look really good.

The wall to the living room can, as before, be continuous .. under the stairs or around the stairwell. However, it must be clarified how the stairs on the upper floor are positioned. It could be tight there. Ideally, with the planned floor height, there would be 17 risers with 17.98 cm each and a tread depth of about 27 cm. This would result in a staircase length of around 460 cm. With the floor height, the upper floor hallway may overlap 1 to 1.5 steps from the ground floor.
