These are ideal conditions after all... Your job from now on is to collect all necessary information regarding the coordination of the individual trades. Then create a plan of who needs to be where and when, and exactly what they need to do. Of course, this is all low budget, and almost no one here is familiar with the process. In my circle of friends, two have built exactly like this. It then takes about 1.5-2 years, since all involved have to earn money during the week. I would suggest your uncle completes the drawing. Then you go around to all relatives and acquaintances and talk to them about the respective material requirements. You need a handful of good friends to help on weekends. So every weekend. Helpers for the masons, roofers, etc. During the week you clean up, bring materials, and set up the construction site. For heating, I would recommend a brine-water heat pump with [Grabenkollektor]. Also, a controlled residential ventilation system with heat recovery and an air well. For the construction phase, an overseas container to store expensive materials and tools. You will have to read a lot, very much, and work meanwhile. But it is possible.

Sounds like an exciting but brutally challenging project - especially for you!

You have to keep everyone happy, hope that all relatives/friends really help and also fulfill their current promises (it wouldn't be the first time that it fails because of that).

You have to coordinate and plan everything - get quotes, buy materials, and so on.... ultimately you act alone like a general contractor - certainly not easy and challenging (especially since it is not your main activity, as I assume you are working alongside this - full-time?).

You will certainly need 2 years of construction time for such a project - if it suits you, then you can do it.

I speak from experience when I say that the painting work partly overwhelmed me (with full-time work alongside) and we also gave some rooms to the painter xD

So you really have to want it... The motivation and drive before the start of construction is usually very strong to try to do everything yourself etc.

That fades extremely quickly and then you might be disappointed (possibly also by your helpers) - but you certainly have to be aware of that.

Great conditions. You practically have almost all trades "in the house." I think it will be possible for you to build relatively cheaply - especially since the helpers are not random people but come from the closest family circle. You can usually rely on that.

I am already aware that I can expect about 2 years for the construction, but I find that quite normal, meaning in our village everyone takes about that long except those who really have everything done for them. Regarding laborers, I don't see a problem; the tilers are employees who also do other tasks. Since there is kind of a deal at my regulars' table, everyone helps those whom you have helped as well; therefore, when someone is building, we usually have a lot of people involved, so I have no concerns.

Right, I work full-time a lot; the whole thing will only be done on weekends and after work, there's no way around that. But I prefer it that way rather than paying 200k more.

The plans, structural calculations, and also permits etc. could be prepared today already about 2 years before the start of construction, right? Or do things change so often that they would no longer be valid in 2 years? In principle, one could just start by digging the foundation pit, and then it should be valid, right?

Sounds optimistic. Two things that make me sit up and take notice: 1. Your father is carrying a huge load of work. Can and does he want to manage that? What if he gets sick or injured? 2. No children planned? How old are you? Even same-sex marriages can have children nowadays. It usually doesn't hurt to at least plan for the option.
