That doesn't help you right now, but you can only do one thing for now. Talk to the general contractor. Everything else makes no sense, because a) the general contractor is still fully on schedule and b) therefore you have no claims until the end of the year. If you move out of your apartment before then, it's - I hardly dare to say it - simply your own personal and self-made problem.

The agreed and signed construction schedule is May this year, that is also something worth?! Especially since there are no worst case scenarios (like lockdowns), completion would be at the latest by the end of 2022 according to the contract. We signed under these conditions that it must be completed this summer (there is also an email about this, which once again remained unanswered). We are not moving out for fun - but because the contract ends. It is almost misleading.

However, the contract is binding and not the construction schedule, unless the contract explicitly states that the end of 2022 only applies under condition XY and otherwise May 2022.
You won’t be able to avoid going to a specialist lawyer. Only they can assess your contract and your options.

Presumably, the contract is drafted so that 12/2022 is binding, especially since there are delivery difficulties and therefore deviations from the construction schedule are justifiable. In this respect, the lawyer would have been more useful from the outset.

Even if the material is already with the general contractor? That seems to be the case, so the deviation is then not justifiable, is it?

So, now to get to the point. WHAT DOES THE CONTRACT SAY??? And by that I don’t mean what you interpret from the contract. I mean "literally". Otherwise no one here can help you. First you say May 2022, then suddenly something with 12/2022 and some conditions. Make up your mind and let us share the contract...
