What budget / financing is possible?

I now live in a 3-room apartment in a larger city with my partner, which we moved into after our studies.
We pay a total of €830 warm. We split all costs 50/50. Therefore, an absurdly high amount remains for me at the end of the month, which is twice as much as I used to earn...

However, it is 100 km away from my workplace. That also plays a role in the planning. I would like to shorten the distance to the workplace and therefore build roughly halfway between both our workplaces.

If you are really done with the children topic (you have to look deep inside yourself for that), then a rather relaxed cabin of, say, 100 to 150 sqm is sufficient. To keep the stress low, you should be clear about what you want to upgrade later. Should the sauna eventually go into the basement? Good, then a basement has to be included and a room reserved/prepared for it. The pool should go into the garden? Then the property must be large enough for that. You only want a little terrace and nothing else in the garden? Then a small property will do as well. All of that affects your costs. Do you want to save future travel time to work? Should it stay near the parents? Do you need an expanded attic for your equipment? If you know your parameters, then you can say where your costs are headed and whether that is appropriate.

I do not need any additional retirement provision.
Due to my place of work (I am a cross-border commuter) and the special nature of my employment relationship, I receive about 80% of my average net income. This is a very high amount by German standards when calculated over the entire career.
Vacation is not included, as I receive 14 monthly salaries and these are reinvested for vacation and financial gifts for my parents :-)

There is another way of life that would be possible if you are already used to frugality. Save as much as possible and invest long-term to retire by your mid-40s or at the latest 50 (or become financially independent). That is how a former colleague of mine did it, although to be honest I don’t know if she really made it since I lost contact with her after she left...

Big jumps like many long-distance trips are then of course only possible with very successful investments...

Complete information makes it easier to answer ;) . Sounds quite reasonable then.

Are you sure you will work there for the next 30 years? If so, then you have the best conditions.

No, I will certainly not work there for 30 years, but in my industry within a radius of 250 km there are at most 5 people who can offer what I do. In the country where I work, there are 3 other institutions that have an eye on me and can offer me similar or better positions. So I have the option to reach out there with the same or better pay, assuming I would like to change jobs or my bosses are tired of me :-D Potential uncertainties are not included, because who knows that already...
