Too much moisture in the single-family house after screed installation? Risk of mold?

By the time the screed comes in for me, it will probably be summer, so I hadn't given it much thought yet. Until now, I had been quite calm about it but found it crazy how quickly mold appears and definitely want to avoid that. But then I'll wait until the screed situation is more concrete before planning further.

We are building with 2 full stories and a cold attic above. So there are no roof windows, but in the attic we will definitely tilt the windows if moisture comes through the hatch.

In summer you can just sit back, open the window for 20 minutes in the morning and evening and that's it. I still got a construction dryer because the cost/risk minimization ratio was worth it to me. Due to supply bottlenecks and tradesmen shortage, I was forced to let my screed dry for 2 months anyway.

Even in a "summer" like this one, we had to rent a construction dryer because it felt like it rained almost all the time. The walls didn't dry that way and I ventilated several times a day.

With us, drying devices were placed directly on, or immediately after, the screed to prevent mold.
I also continuously monitored the humidity and temperature.
Despite the drying devices, it took several days to get the humidity below 90%.
And when the heating was turned on, it went up to 100% again for a few days.
Only a week later were we at 70%.

The only help is to open all windows at least in the morning and evening, "vacuum" the windows, and wipe everything dry where droplets form, ...

I placed a towel on a broom to dry the ceiling with it. That goes significantly faster than with a ladder. You are still somewhat occupied with it, though.
