Semi-detached house floor plan considerations, experiences?

Take the hint seriously. And don’t just look to see if any furniture fits somehow, but whether the "right" furniture also offers enough storage space for your stuff. What does your kitchen currently look like? How many cabinets do you have/need; should a dining area be included in the kitchen? How do you live now, what fits well currently, and where would more space be nice?

So this is a semi-detached house with "only" two full floors and no converted attic, right? In my opinion, too much space is wasted on the ground floor with the guest toilet and the large hallway - unless you actually install a shower in the guest WC. I find a completely closed kitchen in a semi-detached house rather impractical. Later, if you ever have children, you won’t be able to quickly prepare something in the kitchen while keeping an eye on the kids in the living room, because there is a wall in between. So get rid of it. Furthermore, I would move the front door further up and straighten this slanted wall section between the hallway and kitchen. The slanted wall only complicates the kitchen layout. Additionally, I would remove the upper wall of the kitchen towards the hallway as well, so that everything is open. If needed, you can still add a door between the stairway and the hallway.

That would make sense given the dog moving in, so you can rinse him off if he comes in very dirty from outside...

hmm I'll put our floor plan here for you (which was never discussed here )
We have the same plot layout with a semi-detached house on it, same orientation - but everything is a bit bigger.
Our house dimensions are 12.25 x 7.25 - so the width is similar - but in length we have about 1.5m more. Hmm. And we have the attic converted, so there's one more room (man's stuff and guests) and a room for heating and ventilation, which gives us space downstairs in the utility room, as only the house connections are in there then.
I've entered a few measurements again and roughly added some furniture...

How much height do you still have under the roof?

Yeah, the slope downstairs is nonsense and the bathroom and hallway are too big. But what I find worst (by the way also with you ): the bathroom never gets any sun! Bathrooms belong in the east in my opinion, doing body care in the morning sun wakes even the sleepiest man up.

Our current kitchen is 8m2 and there is a table, a washing machine and actually quite a few cabinets which are always full. So we definitely need more. I thought I would make a small pantry shelf in the storage room but I don't know if it will be too warm there...
