We have decided on floating click vinyl flooring throughout the entire house including the basement (except for the bathrooms). The floor is relatively even after the screed. Our installer said he will go over it again with a sanding machine (especially by the walls and in front of the windows) before he installs everything. In a new building, I think the problem of the floor not being even is actually not really relevant...

Oh yes - and a grinding machine hardly helps at all. Especially in the corners, it doesn’t even get in where there are the most dips. And then the material removal is very minimal...

Filling... even leveling compound is no guarantee for a perfectly flat floor.

We also didn’t fill here (knowingly) and there are a few spots where you can notice that the floor underneath has a small bump. And that with vinyl with an HDF carrier board and a layer of cork...

I would clarify that beforehand, because if [gelegt], then it's too late and = trouble. Those are then avoidable surprises

With glued floors, however, you always have the problem of getting them back out.
Possibly, one can now also consider that later on a floating floor can be laid on top of the glued floor. This is at least not uncommon in many old buildings ([fragt sich nur ob das damals so geplant war]).
Personally, I do not count vinyl, for example, among the floors that you will probably have in place for more than 20 years.

In the kitchen, you also don’t necessarily have to glue it down. It also doesn’t necessarily require a "waterproof" vinyl floor.
At least I rarely have large puddles in the kitchen, and if I do, they are quickly wiped up again.
It’s different in the bathroom.

By "let’s wait and see," I mean what still needs to be done to prepare for the installation. Our installer does a good job. When he says he still needs a leveling compound, then that is the case. He just mentioned that in most new buildings the floor is relatively even...
