But I would use a cheap DIY solution with some leftover wood pieces, not an expensive second board - it only has to be at a few critical points (*saving mode*)

I don't find a "Anstückelung" particularly advantageous, as it could possibly cause irregularities in the expansion of the wood. That's why I would prefer a large-surface solution to keep the expansion uniform. But that should be decided by a carpenter.

presumably I am too late, or disorganized.

How does the Ikea lady come up with the idea that 15cm must remain all around? Normally the rule of thumb is that there should be at least 5cm to the next cutout on the right and left, and 10cm to the outer edge or joint. I think the saleswoman just wanted to be on the safe side since cutouts that close together should/can only be done by professionals. Solid wood panels from Ikea are generally also a bit tricky, as they are not made from one piece but from many glued wooden pieces, except for the Akerby. Because of the different wood structures, it is even harder to get a decent, straight cut. In that case, the 5cm webbing between the cutouts is already quite daring.

If you want to have the panels cut by a joiner, which I find extremely reasonable, you should have this done on-site, so he can take measurements himself and install the panel right away. If this is not possible and you have to go to the joinery with the panels, then as a tip, have the cutouts only SCORED. At most 2cm deep, and do the rest yourself at home. A fully cut-out countertop is quite unstable and breaks very quickly.

The panel is finger-jointed after all, what do you think happens if the web is too narrow and the sticks expand differently with heat/moisture -> the panel cracks.

With the cooktop and sink, this is not so much of a problem, the narrow web runs longitudinally to the grain.

Either a carpenter or goodbye solid wood panel.

Indeed, the Numär panel has its own installation instructions. The thing with the laminated batten then of course makes sense. I would mount a perforated angle strip or several angles as a support under the corresponding spots and only fix the panel with thin screws so that the wood can continue to move. For safety, smaller angles could also be placed on both wall sides, then hidden by the finishing strip. Then the panel would be secured downward on one side by the cooktop and upward at the wall by the angles... similar to a groove.
