What does a gas stove have that induction doesn’t? Besides being harder to clean...
on off, you see what you get, flambé by tilting, using a real wok, every pan and pot works, whether magnetic or not and whether with a flat bottom or not, even the really crooked hand-forged one from grandma, from which the fried potatoes taste so good. I enjoy it more. and it doesn’t buzz. when I have the heavy cast iron pot on the induction hob on boost, the entire countertop vibrates. and the hob is from Siemens, the pot from Le Creuset, so that can’t be the reason. my induction hob is only used every few weeks as a supplement to the gas stove, and I kick myself only for having taken the 75 cm gas hob with a 30 cm induction hob instead of the 95 cm gas hob and no induction.
