I had to read it twice as well. :) So when I type folding doors into Google, a bunch of suggestions come up.
Unfortunately, not what we are looking for. Mainly solutions for conservatories, offices, or the cheap PVC variant can be found. A system made of, for example, aluminum frames with glass inserts is only found for outdoor use, but unfortunately that is not what we are looking for.

I only know two who have a foldtt door – both are new buildings from the early 70s – and in both cases these doors were always left open back then. At least when friends were there – I don’t think it was any different otherwise.
My parents had a curtain between the kitchen and dining area back then – this was also used very little, and has probably been left wide open for about 20 years or so.
It is basically a compromise between an open and closed kitchen. We had planned a sliding door here. However, a folding door caught our eye (I am unfortunately not allowed to post the link), the provider for this comes from Italy. So far, I have not been able to find a source or alternatives for it.
