Floor plan design: Orientation of single-family house and optimization

I can't imagine that the budget will be enough. Three full bathrooms, large kitchen and fireplace and lots of windows and area, these are all cost drivers.

In the sketch variant 1 upper floor, one bathroom is of course the office, it is only drawn in the plan so that the bathroom would work on both sides.

The fireplace or the long structure appears as a disturbance and does not add anything positive to the room. Quite the opposite.
Not only is a small wardrobe missing, but also the space for movement and wardrobe for the planned 5 people, basically 3 running meters of closet.
Is the garage in the west because of the view? Where does the view go?
Technology outside the thermal envelope and several meters away from the house? I would basically not plan it that way. It is not efficient and expensive.
The budget also does not reflect the wishes, sorry.
3500€/sqm given the wishes and I would calculate the double garage with 60,000€. Plus additional construction costs etc.

You can forget it. You can currently get 150m² turnkey for about 330,000 EUR, with one bathroom, seriously. Scaled up to your expectations, that alone easily comes to 500,000 for the house, plus upscale fittings, plus kitchen, plus furniture(?), plus additional construction costs... plus garage... and then you still have to lay out 1,100m² of land somewhat reasonably... In the end, there will be a 7 at the front.

Normally, you also want to get daylight into the house in the afternoon through west-facing windows. You give that up with a recessed garage. In winter, it can then get quite dark during the day.

That depends on the floor plan, and for the reasons mentioned, I would not pursue either further.

Then just try again. So there aren't even windows on the upper floor yet. Personally, I would place the garage in the east with a short driveway. That leaves enough "view" to the east and window options to the west. I would omit the utility room airlock instead of a corridor, and the technical room belongs inside the thermal envelope. As already said.
