So you want to build an almost 6 m long and 20 cm wide garage-high dirt channel between the house and the garage, what is supposed to happen there with wind and weather, and when is the garage supposed to come at all? Let's calculate 8 cm finished garage wall (so 16 cm on both sides) plus 20 cm gap, that makes a total of 36 cm. If you build the garage out of sand-lime brick (15 cm), then the total is only 30 cm, you can build to measure and the dirt channel is gone; you still have a symbolic handful of extra centimeters of clear width on top.

The foundation is already built and the order for the garage has already been placed.
I am assuming July for the exterior plastering of the house and the installation of the garage.
If there are no problems with the building authority (because, as approved in the picture, and garages in Hessen are supposed to be either on the boundary or 1m away) and no problems with the structural engineering (because the two strip foundations already exist); from a construction technical point of view, where is the best place to position the garage between the house and the neighboring garage? The aspect of dirt interests me only marginally. Would it make most sense to have it directly against the house wall and without plaster in between? Then there would be 25 cm of space on the other side between garage and garage; to me, that sounds the least problematic.

The dirt will come anyway, even if you don't care - it doesn't care. An attack channel for all winds and weather, that's very much a matter of "taste." Wind and rain get in there.

You want to have the garage lifted in only when the house already has a roof? - the click numbers of this construction fail video will probably skyrocket - at least among the target group for "Chick parks the car" videos. Of course, you build the precast concrete garage at the house best even before the ground floor ceiling.
