Who only has a hammer sees every problem as a nail. Certainly, electric energy is the noblest form because everything can be generated from it... but at the latest the master is taught that it also has to remain economically sensible because resources and money do not grow on trees. Some people were told in a short seminar "Thermodynamics for Housewives" that electricity is the solution to everything and now they believe that. But most of the time it is better to use the form of energy that does not have to be converted through 3 intermediaries... if I need heat, then heat is the first choice, not electricity.
In this respect, I would definitely keep the solar panels. Your roof offers little space for much photovoltaics anyway, especially not facing south. So why throw away what you have and spend a comparatively large amount of money to install 2 or 3 kWp on the roof? Then, when you really need the heat pump, your photovoltaic system hardly produces any energy anymore. Typical values for a 1 kWp system: January around 20 kWh, July around 140 kWh.
Solar thermal uses sunlight much more efficiently. And you can store hot water quite simply; with photovoltaics you would still need an expensive battery...
