Convert storage space into offices

I see it the same way as the elephant, such a layout is somehow already 50 years old.
Useless costs for the many kitchens and WC rooms aside.

Suggestion: Place the coffee(!) kitchen with sink, fridge, possibly dishwasher, microwave (like in the dormitory) in the hallway. That is sufficient; seating for two is hardly necessary. Put it in a niche on the wall towards the restroom.

It is an old-fashioned house with old-fashioned offices. The windows and the depth of the building limit the possibilities. The tenants can also omit the partition walls if they wish. But first, a plan is needed to lay the pipes etc.

Yes, roughly the direction. But as someone who has already lived in smaller rooms: 1.2m for the kitchen is enough without SM. And the bathroom in my 90 sqm apartment is smaller than in the offices. The question is only: if you make both smaller, can you fit an additional office?
