Why look for alternatives to something proven over many years? It's perfectly fine.

Which types of plaster would be mineral-based?

Lime, cement, silicate. That is also standard and proven.

Always remember to use the construction method your preferred company uses. You shouldn't force a WDVS builder to use monolithic construction if that might lead to building defects.

The contractor says that he can do everything. They are not fixed on that, but I have the feeling that he wants to go for WDVS! The other construction methods are probably more expensive and he also does not get the materials (stones) that easily. Maybe he simply has better conditions with the wholesaler regarding the favored construction method
